Okay, I know I say this on pretty much every post, but this really is one of the easiest recipes ever. Just dump a few ingredients in a crock pot and let it cook. Dinner is served. The best part about this recipe is that you can turn on the crock pot before work in the morning and it will be ready as soon as you get home.
I’m all about the classic beef stew with meat and potatoes, but with all of the seasonal winter veg at Trader Joe’s right now, I had to spruce it up a bit. I swapped out the golden potatoes and celery for something with a little more color and it was delicious!
Winter Vegetable Beef Stew
- 2 pounds beef stew meat, cut into 1″ cubes
- 1/2 cup whole wheat flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon ground cloves
- 1 tablespoon brown mustard
- 3 cups beef broth
- 1 sprig fresh thyme
- 2 garlic cloves, smashed
- 1 sweet potato, peeled and cubed
- 1 onion, diced
- 2 large carrots, peeled and diced
- 2 cups vegetable medley (broccoli, cauliflower, green beans, kale, etc)
Place the stew meat in the bowl of a crock pot. Mix together the flour, salt, pepper and cloves. Pour the flour mixture over the stew meat and mix to evenly coat.
Add in the garlic, sweet potato, onion, carrots, vegetable medley (I used broccoli, zucchini, green beans, asparagus and kale), thyme, mustard and beef broth. Stir to combine.
Cook on high for 3-4 hours or low for 6-8.
