Loaded Oatmeal

I know, oatmeal can be SO boring, but this recipe couldn’t be further from that. It’s stuffed with everything you need to stay full and to satisfy that sweet tooth.

When I was a kid, my mom would make oatmeal on the regular and the only thing I liked about it was the plethora of brown sugar I would sneak into it. Seriously, my oatmeal was dark brown by the time I got around to eating it. At one point, I put so much brown sugar in it that I couldn’t even choke it down. What?! I know, crazy.

No need to worry about over brown-sugaring your oats this morning. Just add a handful of ingredients and you’ve got yourself a delicious and healthy breakfast!

Loaded Oatmeal

  • 1/2 cup oats (I prefer old fashioned rolled oats)
  • 1 tablespoon pure maple syrup
  • 2 tablespoons walnuts (or any nut)
  • 2 tablespoons dried berry medley
  • 1 tablespoon dried coconut flake (no sugar added)
  • 1/2 banana, diced
  • 1 1/4 cup almond milk or water
  • cinnamon

Add the oats and almond milk or water to a small sauce pan and bring to a boil over medium-high heat.

Cook, stirring frequently, until the oats are soft and the liquid had evaporated.

Pour the oats into a bowl and top with the nuts, berries, coconut and banana. Pour on the maple syrup, sprinkle with cinnamon and enjoy!
