After spending close to a week in the mediterranean, I’ve come back inspired and still craving all of the mouthwatering food I stuffed myself with. I would attempt Greek souvlaki and home, but when is any traditional food from another country ever as good when you make it in the states?
This lentil salad is so easy and so refreshing, it’s hard not to eat the whole thing in one sitting. Trust me. The best part is, if you’e lazy like me, Trader Joe’s has steamed lentils all ready to go in the refrigerated produce section. Just add a few more ingredients and voila!
Mediterranean Lentil Salad
- 3 cups cooked and cooled lentils
- 1 cucumber, diced
- 1 pound mini heirloom tomatoes, halved
- 1 shallot, finely chopped
- feta cheese (optional)
- 1/4 cup balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon spicy mustard
- salt and pepper
In a large bowl, combine the lentils, cucumber, tomatoes and shallot.
Whisk together the balsamic vinegar, olive oil, spicy mustard and a few shakes of salt and pepper to make a dressing.
Pour the dressing over the salad and toss to combine.
Sprinkle feta cheese on top for some more tang and enjoy!
