Bacon Cheddar Waffles

Friends, I give you the ultimate brunch food: bacon cheddar waffles. Can we just appreciate how amazing brunch is? You get the sweet, sugary breakfast foods mixed with the decadent, savory lunch items and it is magical.

Personally, I go for more of the sweet and less of the savory. Always. However, when I found this recipe for bacon cheddar waffles, I knew I had to test it out and yum! A little drizzle of maple syrup and you still get that sugar needed to kick start your weekend…or Thursday.FullSizeRender-18FullSizeRender-19

Bacon Cheddar Waffles

  • 1 cup all purpose flour
  • 2 tablespoons brown sugar
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 3 tablespoons butter, melted
  • 1 cup buttermilk
  • 4 sliced applewood smoked bacon
  • 1/2 cup freshly shredded cheddar
  • maple syrup

Cook the bacon, chop it up and set aside. Preheat the waffle iron.

In a medium bowl, mix together the flour, sugar, baking powder, baking soda, salt and pepper. Whisk the eggs together in a small bowl.

Make a well in the flour mixture and pour in the eggs, melted butter and buttermilk. Mix together until just combined. Add in the chopped bacon and cheese and give it a stir.

Spray your waffle iron with pan spray and pour in about 1/2 a cup of the batter. Let the waffles cook until golden brown.

Serve warm with a bloody mary maple syrup and enjoy!
