Friends, I give you the ultimate brunch food: bacon cheddar waffles. Can we just appreciate how amazing brunch is? You get the sweet, sugary breakfast foods mixed with the decadent, savory lunch items and it is magical.
Personally, I go for more of the sweet and less of the savory. Always. However, when I found this recipe for bacon cheddar waffles, I knew I had to test it out and yum! A little drizzle of maple syrup and you still get that sugar needed to kick start your weekend…or Thursday.
Bacon Cheddar Waffles
- 1 cup all purpose flour
- 2 tablespoons brown sugar
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 2 eggs
- 3 tablespoons butter, melted
- 1 cup buttermilk
- 4 sliced applewood smoked bacon
- 1/2 cup freshly shredded cheddar
- maple syrup
Cook the bacon, chop it up and set aside. Preheat the waffle iron.
In a medium bowl, mix together the flour, sugar, baking powder, baking soda, salt and pepper. Whisk the eggs together in a small bowl.
Make a well in the flour mixture and pour in the eggs, melted butter and buttermilk. Mix together until just combined. Add in the chopped bacon and cheese and give it a stir.
Spray your waffle iron with pan spray and pour in about 1/2 a cup of the batter. Let the waffles cook until golden brown.
Serve warm with a
bloody mary maple syrup and enjoy!
