Skinny Chicken Salad

With summer just around the corner and an abundance of days spent in swimsuits, it’s that time of year to (kind of) watch what we eat. And by watch what we eat, I mean, let’s substitute the mayonnaise for greek yogurt and call it a day. FullSizeRender-3 copyFullSizeRender-2

I mean, let’a be honest, it may be bikini season, but that just means that those hot days call for cold ice cream. So, instead of dieting like a mad man and killing yourself, lets just make some healthier choices for a few of our meals, starting with some skinny chicken salad. This is the perfect go to lunch or snack because it is packed with protein, allowing you to beach it up all day without having to bail for tacos. But you can still do that.

Skinny Chicken Salad

  • 1 12.5 ounce can chicken in water
  • 1/4 cup plain greek yogurt
  • 3 celery stalks
  • 1 bunch grapes
  • 1/4 cup walnuts
  • salt and pepper

Drain the chicken and place in a medium bowl. Chop the celery and walnuts and halve the grapes.

Add the yogurt, celery, grapes and walnuts into the bowl with the chicken and mix until everything is combined.

Season with salt and pepper to taste and enjoy! This chicken salad is great with crackers, or on toasted sandwich bread.FullSizeRender
