I used to have a love/hate relationship with sweet potatoes: I loved to hate them. How could I possibly hate a sweet potato? I can’t quite answer that question. All I know is that somewhere in the last two out of twenty four years of life, I have grown to love them. Oh how I was missing out!Sweet potatoes already taste like they’re candied; add more sugar to them and its almost a joke to call it dinner. But, it is! And it is oh so good. Not going to lie, the thought of mixing bbq sauce and sweet potatoes together was a tad bit repulsing, but I figured I’d give it a try. Thank goodness I did because the tangy bbq sauce and the sweet potatoes are a match made in culinary heaven! BBQ Chicken Stuffed Sweet Potatoes
1 boneless, skinless chicken breast
2 sweet potatoes
Pierce the sweet potatoes with a fork and place in a cold oven. Turn the oven on to 425º and bake until tender, about 60-70 minutes.
While the potatoes are baking, place the raw chicken in a pan and completely cover with BBQ sauce. Cook on low heat until the chicken is no longer pink in the middle. Using two forks, shred the cooked chicken and set aside.
When the sweet potatoes are done, slice them in half, mash up the center and top with the BBQ chicken.
Roasted kale/brussels sprouts go great with these!
